Lamb “fries” and mountain “oysters” fall into the category of edible unmentionables. Like sweetbreads and lights, they state what they aren’t versus claim what they are. Lights are lungs, from the Middle English lightes, meaning likely to float away. Lungs are light, but lungs don’t cut a path in the dark, or pave the way, or go off in blackouts. As an eater of lights, I would be left wondering. It’s the 21st century: Call a spade a spade and a lung a lung.
